This sukka recipe is from the Mangalore–Udupi,Kundapur region. Each household has its own method of preparing chicken sukka.hence sukka has many regional variations, extending it to Goa & the Maharastrian style from Kohlapur.
Neer dosa is the traditional accompaniment to this dish, a popular combo in the South Canara region.
But goes well with steamed rice too.

Ingredients and spices that need to be Take to make Kori Sukka|Kori Ajadina | Chicken Sukka:
- Powder 1
- 1 tsp methi seeds
- 1 tsp jeera
- 1 tsp fennel/ saunf
- 1 inch cinnamon
- 3 cardamom
- 6-7 cloves
- 1 tsp peppercorns
- 8 curry leaves
- 1/2 cup Coriander seeds
- 10 cashews
- Powder 2
- 16-17 Byadige chillies
- Masala paste preparation
- 3 tsp oil
- 8-10 garlic pods
- 1/4 cup onion
- 1/4 tsp turmeric
- 1/4 cup grated Coconut
- 10-15 tsp approx prepared Sukka powder
- 1 tsp tamarind paste
- Sukka preparation
- 3 tsp oil
- 3 tsp ghee
- 1 cup chopped onion
- 8-10 curry leaves
- 3/4 kg chicken bone in (marinated with salt & turmeric for 30 mins
- 2 cups fresh grated Coconut (pulsed in mixie without water)
- as per taste Salt
- 2 tsp jaggery powder (optional but balances the spices)
Instructions to make to make Kori Sukka|Kori Ajadina | Chicken Sukka
- Step 1 : Sukka powder preparation:
Note:The recipe can be doubled or tripled in order to make in large quantity & store for later use.
Dry roast all the ingredients mentioned under powder 1,powder 2 seperately on low flame,cool & grind to fine powder.
*grind both powder1 +powder2 together.
*sieve the above powder & cool, then store in airtight container for later use.This is the sukka powder.




- Step 2:Masala paste preparation:
1.Fry the ingredients mentioned under masala paste preparation, in oil,transfer to a mixie jar.
2.Add required amount of sukka powder(according to your spice tolerance; 10-12 tsp), 1 tsp tamarind paste,little water & grind to smooth paste. - Step 3: Sukka preparation:
1. In a kadai,add oil,ghee,onion,curry leaves.saute.
2.Add the marinated chicken, cover & cook until half done.
3.Then add the prepared masala paste from step 2. Mix,add water if required and cook for 5 mins.
4.Add coconut,jaggery powder, adjust salt.
Cook until chicken is completely done. You can also adjust the consistency by adding water if you need a semi gravy consistency.
