- For Chicken Tikka
- First marination
- 250 gms boneless Chicken thighs
- 1 tsp Kashmiri Red chilli powder
- as per taste Salt
- 1 lime juice
- 1 Tbsp ginger garlic paste
- Second marination
- 2 Tbsp mustard oil
- 1 tsp Kashmiri Red chilli powder
- 2 Tbsp hung curd
- as needed Salt
- 1/2 tsp turmeric powder
- 1 tsp Chaat Masala
- 1 tsp cumin powder
- 1/2 tsp garam masala powder
- 1/2 tsp Black salt
- Pinch kasoori Methi
- as required Charcoal
- as required Ghee
- as per need Oil
- as per need Melted butter
- For Makhni Gravy
- 1/2 tsp cumin seeds
- 2 Tbsp oil
- 1/2 tsp cumin seeds
- 1 large onion sliced
- 1 large tomato cubed
- 1 bay leaf
- 3-4 green cardamoms
- 1/2 tsp turmeric powder
- 3-4 green chillies chopped
- 3-4 Kashmiri whole red chilli
- 1 tsp Kashmiri red chilli powder
- 4-5 cashew nuts
- as Few coriander leaves stems
- 4-5 garlic cloves
- 1 ” ginger chopped
- as required Salt
- 1 cup water
- For Onion Tomato Masala Gravy
- 1 large onion chopped
- 1 large tomato chopped
- 3-4 green chillies chopped
- 1 Tbsp ginger garlic paste
- 2-3 garlic cloves chopped
- 1 tsp Kashmiri Red chilli powder
- 1/2 tsp Turmeric powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp garam masala powder
- Sprig coriander leaves chopped
- as required Ghee
- 2 Tbsp cream
- 1/2 tsp cumin seeds
- 1 Tbsp honey
- as per taste Salt
- as per taste For Garnish - Kasoori Methi powder, chopped coriander leaves, cream
Instructions to make to make Chicken Tikka Masala
- Cut the boneless things into 2” cubes. For first marination put in a bowl and add the chicken pieces, ginger garlic paste, salt, lime juice, Kashmiri red chilli powder. Mix and set aside for 15 mins
- For second marination in a bowl add mustard oil, Kashmiri red chilli powder, salt, Chaat Masala, black salt, turmeric powder, cumin powder, Hung curd, kasoori Methi and mix well. Set the marination for 30 minutes at least
- Put them in sheikhs and put oil in a grilling pan. Grill them well, add melted butter on it. Set aside and place a charcoal in a bowl, add ghee and place on the Chicken Tikka bowls and cover for a smoky effect. Chicken Tikka is done. Set aside the marination gravy.
- For Makhni Gravy - in a pan heat oil and add bay leaf, cumin seeds, green cardamoms, stir for few seconds, add sliced onion and on medium flame cook to get colour. Add cubed tomatoes, garlic cloves, ginger chopped, Kashmiri red chilli powder, whole Kashmiri red chillies, turmeric powder, cumin powder, salt, chopped green chilies, coriander leaves stems, cashew nuts, hot water and mix everything very well.
- Cover to cook for 20 mins. Keep stirring in between, set aside, extract the bay leaf and cool completely.
- Add to a blender and make a purée, set aside
- For Onion Gravy Masala - in a pan heat ghee and oil, add cumin seeds, stir for few seconds, add chopped garlic, chopped onions, chopped tomatoes, ginger garlic paste, turmeric powder, Kashmiri red chilli powder, chopped green chilies, cumin powder, coriander powder, garam Masala powder, salt. Add 1/4 cup water. Mix well, add chopped coriander leaves. Add cream and mix well. Add kasoori Methi and mix well.
- Add Chicken Tikkas and mix well. Set aside
- Garnish with Kasoori Methi, chopped coriander leaves and cream
- Plate with Paratha or Roti and enjoy
